To learn the controls for STORY mode, complete the tutorial at the beginning of the campaign. The combinations to do certain moves can be found in the PROFILE section of STORY mode.
In fights in STORY mode, if the player is using 2 Joy-Con or a Pro Controller, the controls are as follows:

In the game menus, you can use the buttons displayed in the hints at the bottom of the screen or in the menu items.
In SPARRING mode, some combinations of buttons are added to use a special ability (if your character has it). It is the combination ZL+ZR if the player is using 2 Joy-Con or a Pro Controller.
The combination changes to SL+SR if the player is using one Joy-Con. You can view the current control layout under Settings - Controls.
